Tips on the perpetration of Tofu

Texture:

- There are three types of Tofu:
- Soft or silken, in cardboard box.
- Japanese style- more solid, regular, packed in water.
- Chinese style- firm, very dense, packed in water.

Taste:

Fresh made is sweet in flavor and aroma, but storage in
water dilutes this and there is a bland taste.

Storage:
|
Look for the expiration date and buy the freshest possible. For longer
storage remove from package and place in fresh water. Change the water
daily if opened. Frozen: The denser types freeze well for a chewy meat texture.
Freezing for more than three days is not recommended.

in package with the water.

Marinating:
|
Always marinate in a glass, stainless steel or enamel. Turn at least
once. Long marinating should be done refrigerator in a covered
container.

Cooking:
|
Tofu can be prepared by every imaginable means. Experiment from
grilling to broiling! Rinse off the Tofu before using, and wring out.
